Kalib, more commonly known as Korean BBQ Beef Short ribs, is a type of marinated meat found in South Korea, typically made from beef or pork short ribs.The longer you marinate the ribs, the better they’ll taste.
5 pounds Korean style beef short ribs – this cut of meat can be found at most Asian grocery stores
1 cup brown sugar, packed
1 cup soy sauce
1/2 cup water
1/4 cup mirin (rice wine)
1 small onion, peeled and finely grated
1 small Asian pear, peeled and finely grated
4 tablespoons minced garlic
2 tablespoons dark sesame oil
1/4 teaspoon black pepper
2 green onions, thinly sliced (optional)
Rinse short ribs to get rid of any blood. Let them drain in a colander or pat dry with a towel.
In a bowl, whisk together remaining ingredients. Transfer the beef into a large sealable freezer bag or container. Add the marinade, press out excess air from the bag, and seal. Turn the bag over several times to ensure beef is evenly coated. Refrigerate overnight.
Heat a grill or cast iron skillet to medium heat. Drain excess marinade off beef. Cook the ribs, turning once, about 3 to 4 minutes per side. Garnish with thinly sliced green onions, if desired.
